Homemade muesli

IMG_0559.JPGMaking your own muesli is fun, and you are fully in control of what goes in it. My version uses wheatgerm, but it can be left out if you are gluten-intolerant. Chances are you will be making this forever as you or your family will not want to go back to the shop-bought variety.

In a large saucepan, put
0.5 cup vegetable oil
1.5 cup water 
1 tsp salt
4 tbsp sugar
4 tbsp golden syrup or honey

Bring to a boil, then add
1 kg wholegrain oats
1 cup wheatgerm
1 cup coconut chips
1 cup whole almonds
0.5 cup linseeds
0.5 cup pumpkin seeds
0.5 cup sunflower seeds
0.5 cup sesame seeds

Mix well, then divide mixture over two greased baking sheets. Bake in preheated oven at 180 degrees Celsius for about 25 minutes until golden brown, stirring every 5 minutes to ensure even baking.

When muesli has completely cooled, add dried fruit (sultanas, raisins, chopped up apricots, dates, whatever you like) and chocolate chips for true deliciousness.

Store in an airtight container.
